Instructions
 

  • Preheat convection oven to 400°F.
  • Wash apples.
  • In a full 4 inch deep hotel pan add butter.
  • Melt in the oven for 5-10 minutes until butter is melted.
  • Remove from over and add honey and cinnamon stir well to mix ingredients.
  • Core and wedge apples.
  • Add apples to the full pan with melted butter mixture and mix well to coat.
  • Bake for 15 minutes. Flip over and bake another 5-10 minutes or until apples are golden brown and tender.
  • Serve warm or at room temperature.
  • Transfer to full 4" deep hotel pan for service. Portion 1/2 cup portions using a #8 scoop.
  • Critical Control Point:
    CCP: Wash hands thoroughly before handling food, after handling contaminated food or objects, and before switching to another step where there is an opportunity for contamination. This applies as well to before and after glove use. Use clean pair of gloves when handling raw product. Replace gloves after handling any other object.
    CCP: Ensure cold food is held at a temperature below 41° F.
    CCP: Cook until internal temperature is 135°F.
