Instructions
 

  • Preheat convection oven to 300°F. Adjust oven racks to fit full-size 4" deep hotel pans. Lightly oil each hotel pan with 1 Tbsp oil.
    For 50 servings: use 1 pan.
    For 100 servings: use 2 pans.
  • Trim any large external fat from the bison roasts if present.
  • Place the whole roasts directly into the prepared hotel pan(s). Rub each roast with 2 Tbsp oil.
  • In a small bowl, mix the salt, garlic powder, and dried sage. Sprinkle the seasoning mixture over all sides of the bison.
  • Top the roasts with pieces of butter.
  • Pour beef broth around (not on top of) the meat in each pan.
  • Cover tightly with foil to retain moisture and prevent drying.
  • Bake at 300°F for 3-4 hours, or until the innermost part of the roast reaches 165°F for at least 15 seconds. Meat should shred easily with a fork.
    Critical Control Point: Heat until an internal temperature of at least 165°F for 15 seconds is reached.
  • Remove pans from oven and let rest 10-15 minutes.
  • Slice the roasts into 2 oz cooked portions. Check on a scale every 4-5 slices to ensure consistency.
  • Serve a 2 oz slice per portion.
